How does the pH of acid change in relation to time and temperature?

I'm doing a science project on the question above, I'm using lemon, orange, and apple juice. Strangely, it was the cold temperature that changed the pH of apple juice more basic. Why? And does mold affect pH in any way? And how does time/temperature affect pH of acids?How does the pH of acid change in relation to time and temperature?
anything that effects the concentration of hydrogen ions in the solution will effect the pH. changing the temperature of a solution could change its ability to dissociate and therefore changing the number of H+ ions in the solution.
