Are you looking to change the pH of the plants themselves, or the water they're in?

Most plants regulate what compounds enter their cells, because their chemical metabolism depends on a limited range of pH to function properly. So if you attempt to change this, the plants would either die, or take in additional water or other chemicals to correct any smaller changes.

If you just wanted to change the pH of the water they grow in to observe the effect it had on their survival or growth, that would e easier. Adding small amounts of baking soda would raise the pH. You could also do this by adding crushed coral or sea shells, or limestone gravel. To lower the pH, you could add small amounts of vinegar, or add wood or peat moss tho the tank. But whenever you add a substance such as these, you're also adding other chemicals, so if you're doing this as an experiment, pick one substance, and add varying amounts of just that. Then you wouldn't have the other chemicals as a variable that could affect the outcome.
